Ingredients

1 cup all purpose flour

½ cup quick-cooking oats

½ cup granulated sugar

¼ cup packed light brown sugar

1 teaspoon cinnamon

1 stick unsalted butter, cut into tablespoons
Directions
At home:
Whisk together the flour, oats, sugar, salt and cinnamon. Place in a sealed container. Pit and slice the peaches into ¼ wedges. Store in a plastic bag in your cooler.
At the campfire:
Place your cast iron skillet over a bed of coals. Add the butter and and cook, stirring frequently, until golden and nutty smelling.
Stir in the topping and cook until the oats are lightly browned. Remove from the skillet and set aside.
Meanwhile, macerate the peaches: toss the peaches with the honey and lemon juice and set aside for 30 minutes, stirring occasionally, until the peaches have released some of their juices.
Pour the peaches and their juices along with ¼ cup water into the cast iron skillet. Cook over medium heat, stirring regularly, until peaches are nicely caramelized and starting to break down.
Remove skillet from the heat, and sprinkle the prepared topping over the top of the peaches. Serve with a dollop of fresh whipped cream.
