Citrus Vinaigrette
Homemade vinaigrette perks up any salad. This citrus version can be made with either fresh citrus juice (your choice of lemon, orange, lime or a combination!) or with a citrus flavored vinegar.
For those who enjoy an apple cider vinegar, Little Apple Treat's Blood Orange + Meyer Lemon Apple Cider Vinegar has a perfect balance of acidity and fruitiness. It can also be used anywhere you would add a squeeze of lemon to brighten flavors.
For balsamic lovers, the Ritrovo Citrus Balsamic has a high viscosity that makes it perfect for emulsifying into dressing. It's also delightful drizzled over fresh fruit.
The best olive oil for salad dressing is flavorful and fruity. We use a 100% organic olive oil from the Puglia.

Ingredients
-
1/4 cup fresh citrus juice
-
Salt and Pepper, to taste
-
Pinch of white sugar
-
1 tablespoon dijon mustard
-
3 scallions, white and green parts finely minced
-
3/4 cup olive oil
Directions
In a small bowl, whisk together the citrus juice, salt and pepper, sugar, dijon mustard and scallions.
While whisking, slowly drizzle in the olive oil. Continue whisking until well emulsified.
Alternatively, add the first five ingredients to a food processor and pulse to combine. With the food processor running, drizzle in the olive oil a little at a time, taking care not to add too much too quickly.
