Classic Buttery Dinner Rolls
Classic dinner rolls are a recipe that doesn't really need to be scaled for smaller groups, because the rolls keep well in the fridge or can be frozen. You might freeze them two to four at a time for future small dinners. Fully cooked rolls should be thawed out on the counter for 4-6 hours before rewarming in the oven wrapped in foil.
If you're not a seasoned baker, read this recipe more than once before starting. Give yourself plenty of time - this recipe needs to rise not once, not twice, but three times, but with a little patience and extra planning, they're well worth the effort.

Ingredients

4 Teaspoons Instant Dry Yeast

1/3 Cup Warm Water

1/4 Cup Sugar

1/4 Cup Butter, softened

2 Teaspoons Salt

1 Cup Warm Milk (110º F)

2 Large Eggs

4 1/2 Cups All-Purpose Flour, plus more if needed
Directions
Add 1/3 cup warm water to the bowl of a stand mixer fitted with a dough hook and sprinkle with yeast. Let sit for 10 minutes until foamy. After about 10 minutes, add the sugar, butter, salt, eggs and milk. Mix for several seconds until just combined. Let rest for 5 minutes.
With the stand mixer set to medium speed, gradually add in the flour to form a stiff dough, beating well after each addition. Knead for 5-7 minutes on medium speed until the dough is smooth and satiny.
Remove bowl from the stand mixer and cover with a lint-free towel. Move to a warm place and let rise for 1 hour.
After 1 hour, punch down the dough, then recover and let rise again for another full hour.
Afrer the second rise, remove the dough from the bowl and divid in half. separate each dough half into 6-8 rolls depending on the size you dersire. Place in a lightly greased 9x13" baking dish and cover once more with a dish towel. Let rise for 1 hour.
While rolls are rising, preheat the oven to 350º F. Bake 15-18 minutes or until golden brown on top. Brush with butter immediately after removing from the oven. Serve warm.
To freeze, wrap leftover cooked rolls tightly in plastic wrap and then aluminum foil.
