Ingredients

3 cups all purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

1 cup shortening, chilled and diced

2 eggs, lightly beaten

1 cup sugar

4 tablespoons milk

1 teaspoon vanilla extract
Directions
In a large bowl, soft together flour, baking soda and baking powder. Using a pastry blender, cut the shortening into the dry ingredients until a dry, crumbly texture is achieved.
Using a whisk, beat in the eggs and sugar. Switch to a spatula, and stir in the milk and vanilla until just combined. Be careful not to overmix - this makes tough cookies. Divide dough into two equal parts, and shape each half into a round, flat disk. Wrap with plastic wrap and chill the dough for at least 1 hour, or overnight.
When ready to roll out, dust your work surface and rolling pin liberally with flour our lay out a silicone rolling mat. Working with one disk of dough at a time, lightly flour the surface and roll out to a ¼” thickness.
Line two cookie sheets with parchment paper and preheat your oven to 350º. Cut the dough into shapes using cookie cutters and transfer each cookie to the baking sheet. Bake for 11-12 minutes or until lightly browned. The cookies will still be somewhat soft. Cool for 5 minutes on the cookie sheet, then transfer to a wire rack to cool completely.
Frost once completely cool.
