Traditionally made with tequila, this Smoky Paloma features Drink Monday NA Mezcal. Make with your favorite tequila, Mezcal, or other NA spirit.
1 slice lime
2 ounces Drink Monday NA Mezcal
½ ounce agave or honey
3 to 4 ounces grapefruit soda, to taste
Squeeze of fresh lime juice
Toast the lime slice: if using a torch, dust one side of the lime with granulated sugar and place in a heat proof dish. Hold the torch about 2” from the surface of the lime. With the flame on continuous, brulee until the lime is well charred and sugar has caramelized. You can also toast on the stove top, grill, or under the broiler.
Add ice to a long drink glass. Pour in the Mezcal and honey, and stir gently to combine. Top with the grapefruit soda and a squeeze of lime juice. Garnish with a slice of toasted lime.
