Fresh berries, a little bit of sweetener and coconut cream make these popsicles deliciously creamy and lightly sweet! Perfect for your 4th of July BBQ.
Ingredients

12 ounces strawberries, stemmed

12 ounces blueberries

3 bananas

6 tablespoons coconut cream, divided

3 tablespoons simple syrup
Directions
Make fruit purees:
Blend strawberries with 2 tablespoons coconut cream and 1 tablespoon simple syrup. Pour into a a lipped bowl or measuring cup. Rinse the blender and repeat with the blueberries. Rinse again, and repeat with the bananas.
Assemble and Freeze:
Place your popsicle mold on the counter. Start by pouring approximately 2 tablespoons of the strawberry puree in the bottom of each mold, so it’s about ⅓ of the way full. Repeat with the banana mixture, then the strawberry. A funnel can be very helpful for this process but it’s possible to do it without one.
Seal the mold and slowly push the popsicle sticks into the slots making sure you don’t reach the bottom. Leave about 1” of stick showing. Place the full, lidded popsicle mold in the freezer for a minimum of 5 hours.
