The end-grain cutting surface on this chopping block is comprised of the wood fibers at the ends of 2.25-inch-long pieces of hard rock maple. It’s tough enough to absorb serious slices from chef’s knives and repeated thrusts from cheese hatchets and meat cleavers, yet forgiving enough to spare their sharp blades. End-grain boards are also renowned for aesthetic reasons. Their cutting surfaces resemble checker boards, but show dozens of shades of color instead of only two. And each 1.5 by 1.75 inch end-cut rectangle shows a different, small slice of the maple tree’s fascinating growth rings.

You effectively get two butcher block cutting boards in one in this John Boos classic, which is offered in three sizes: 18" x 18", 20" x 15" and 24" x 18". At those sizes and 2-1/4 inches thick, you’ll need some help if you’re going to take advantage of the block’s reversibility since they weigh between 21 and 27 pounds each.That’s where the finger grips carved into the board’s ends come in handy (pun intended). They will aid you in flipping the board to access a clean and dry surface once the other is damp or soiled.
Finished with Boos Block Board Cream, which Will Require Reapplication
This secret blend contains beeswax and mineral oil. The oil penetrates and moisturizes, whereas the wax leaves a protective, silky barrier. To keep both chopping surfaces food-safe, healthy and great looking, reapply butcher block oil or board cream at least monthly.
